Twenty five pounds of fresh beef leaves just a small space for frozen edemame and gluten-free waffles and now I go to bed knowing that a liver rests behind the ice cube tray...we'll get there someday. Three hours into the pick up and dividing up, the fajita meat had thawed and so it became my first victim.

I made a simple marinade of a few things around the house- Bragg's Liquid Aminos, dry mustard, garlic salt and pepper and let 'er sit all day. Later that evening I
sauteed the beef in my dutch oven (I use it for almost everything!), sliced and laid it over a corn tortilla, fresh spinach and a white bean puree (white beans, lime juice, cumin, salt, and basil) and garnished with diced tomatoes. Voila! My first fajita with our Bessie!
